About the Society

International Society of Scientific Gastronomy

An international academic society dedicated to the promotion, development and teaching of Scientific Gastronomy as a new scientific discipline.

The Society was born from the Barcelona Manifesto of Scientific Gastronomy (2019), drafted and signed on 6 March 2019 at the Aula Magna of the Universitat de Barcelona, during the Science & Cooking World Congress Barcelona 2019. The signatories — professors, chefs, researchers, communicators and experts from all over the world who had spent decades contributing to the understanding and innovation of gastronomy from their different disciplines — agreed to establish the fundamental principles of a new field of knowledge and to work together to promote it.

The Society was formally constituted on 9 November 2022, growing from the community of Manifesto signatories and participants in subsequent editions of the Science & Cooking World Congress. All original signatories of the 2019 Manifesto are automatically founding members of the ISSG.

A Society with Many Voices

The ISSG is a society with many souls: it brings together physicists, chemists, biologists, food technologists, data scientists, chefs, pastry chefs, agronomists, nutritionists, communicators, and food producers from across the world. It is not the expression of a single institution or laboratory, but of an international community united by the conviction that science and gastronomy belong together.

Institutional Links

The Society operates internationally. It maintains close ties with the Science & Cooking World Congress Foundation (Barcelona), which co-organises the periodic congresses agreed in the Manifesto, and with academic and professional institutions from across Europe, the Americas, Asia and beyond. A full list of partner institutions and founding members is available in the Founding Members section.
